Beef Casserole Recipe

Beef casserole is a hearty and comforting dish that combines tender beef, vegetables, and rich flavors, all baked together to create a delicious meal. Here’s a step-by-step recipe to make a classic beef casserole.

Ingredients

For the Casserole:
  • 2 lbs (900 g) beef chuck or stewing beef, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 cup (150 g) frozen peas
  • 2 cups (240 ml) beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp all-purpose flour (optional, for thickening)
For Topping (optional):
  • 1 cup (100 g) grated cheese (cheddar or your choice)
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Beef
  1. Season the Beef: In a large bowl, season the beef cubes with salt and pepper.
  2. Brown the Beef: In a large, heavy-bottomed pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the beef in batches, browning on all sides (about 5-7 minutes per batch). Remove the browned beef and set aside.
Step 2: Sauté the Vegetables
  1. Cook the Onions and Garlic: In the same pot, add the chopped onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
  2. Add Carrots and Potatoes: Stir in the sliced carrots and diced potatoes, cooking for another 5 minutes.
Step 3: Combine Ingredients
  1. Return Beef to Pot: Add the browned beef back into the pot with the vegetables.
  2. Add Liquids and Seasonings: Pour in the beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Stir well to combine.
  3. Thicken (optional): If you prefer a thicker sauce, sprinkle 2 tablespoons of flour over the mixture and stir to coat the ingredients.
  4. Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender. Stir occasionally.
Step 4: Add Peas and Final Seasoning
  1. Add Frozen Peas: About 10 minutes before the casserole is done, stir in the frozen peas. Adjust seasoning with additional salt and pepper if needed.
Step 5: Bake the Casserole (optional)
  1. Preheat Oven: If you want a baked topping, preheat your oven to 375°F (190°C).
  2. Transfer to Baking Dish: If using a Dutch oven, you can leave it as is. Otherwise, transfer the beef mixture to a large baking dish.
  3. Add Cheese (optional): Sprinkle the grated cheese over the top of the casserole.
  4. Bake: Place the casserole in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
Step 6: Serve
  1. Garnish: Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley.
  2. Enjoy: Serve the beef casserole hot, accompanied by crusty bread or a side salad for a complete meal.

Tips for Success

  • Meat Choice: Chuck roast or stewing beef works best for a tender result. Avoid lean cuts, as they can dry out during cooking.
  • Vegetable Variations: Feel free to add other vegetables such as bell peppers, green beans, or mushrooms based on your preference.
  • Make Ahead: This casserole can be made a day in advance and stored in the refrigerator. Reheat in the oven before serving.
Enjoy your delicious homemade beef casserole, perfect for family dinners or gatherings!
