- 4 cups chicken stock (950 ml)
- 3 tablespoons fish sauce (optional)
- 1 teaspoon sugar

For the Noodles and Toppings:- 8 ounces egg noodles (225 g)
- 2 handfuls raw bean sprouts (washed and trimmed)
- Fresh cilantro leaves (for garnish)
- 1 lime (cut into wedges)
Instructions
Step 1: Prepare the Curry Broth- Heat Oil: In a large pot, heat 2 tablespoons of vegetable oil over medium-high heat.
- Sauté Aromatics: Add the minced onion, garlic, ginger, and lemongrass. Cook for about 6 minutes until softened and fragrant.
- Add Curry Paste: Stir in the red curry paste and cook for another minute.
- Cook Chicken: Increase the heat to high and add the sliced chicken thighs. Stir-fry until the chicken turns opaque.
