Ingredients

  • 4 cups chicken stock (950 ml)
  • 3 tablespoons fish sauce (optional)
  • 1 teaspoon sugar
  • Salt (to taste)
For the Noodles and Toppings:
  • 8 ounces egg noodles (225 g)
  • 2 handfuls raw bean sprouts (washed and trimmed)
  • Fresh cilantro leaves (for garnish)
  • 1 lime (cut into wedges)

Instructions

Step 1: Prepare the Curry Broth
  1. Heat Oil: In a large pot, heat 2 tablespoons of vegetable oil over medium-high heat.
  2. Sauté Aromatics: Add the minced onion, garlic, ginger, and lemongrass. Cook for about 6 minutes until softened and fragrant.
  3. Add Curry Paste: Stir in the red curry paste and cook for another minute.
  4. Cook Chicken: Increase the heat to high and add the sliced chicken thighs. Stir-fry until the chicken turns opaque.
  5. Add Spices and Liquids: Sprinkle in the curry powder and turmeric powder. Then pour in the coconut milk and chicken stock. Add fish sauce (if using) and sugar. Bring the mixture to a boil.
